Ingredients

The filling

  • 8 small-medium apples (peeled, cored and chopped)
  • 1 dash lemon juice
  • cup sugar
  • 1 Tbsp cornstarch
  • ½ tsp cinnamon
  • 1 pinch salt

The topping

  • cup packed light brown sugar
  • ¼ cup gluten-free flour blend
  • ½ cup gluten-free old fashioned oats
  • ¼ cup almond meal
  • ¼ tsp cinnamon
  • 1 pinch salt
  • cup non-dairy butter (melted)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x9 baking dish.
  2. In a large bowl, toss the chopped apples with lemon juice, sugar, cornstarch, cinnamon, and salt.
  3. Transfer the apple mixture to the prepared baking dish.
  4. In the same bowl, combine brown sugar, gluten-free flour, almond meal, oats, cinnamon, and salt.
  5. Add melted non-dairy butter to the dry ingredients and mix until it resembles wet sand.
  6. Sprinkle the topping over the apples in the baking dish.
  7. Bake until the apples are soft and the topping is golden brown, about 45 minutes to 1 hour.
  8. Let it rest for 10-15 minutes before serving.
