Ingredients

The filling

  • 5 medium apples (any variety)
  • cinnamon to taste
  • nutmeg to taste

The topping

  • 2 cups almond meal
  • ½ cup melted coconut oil
  • cup sugar
  • 1 tsp vanilla extract
  • cinnamon to taste

Instructions

  1. Preheat the oven to 325°F.
  2. Slice the apples into small pieces and place them in a 9" x 9" baking dish.
  3. Sprinkle cinnamon and nutmeg over the apples according to your taste.
  4. In a mixing bowl, combine almond meal, sugar, melted coconut oil, vanilla extract, and additional cinnamon.
  5. Mix until the mixture is lumpy and the coconut oil is absorbed.
  6. Spread the almond flour mixture evenly over the apple slices.
  7. Bake for 45-55 minutes until the topping is browned and the apples are soft.
  8. Allow to cool slightly before serving, optionally with vanilla ice cream.
