Ingredients

The salad

  • 1 pound medium Pan-Seared Citrus Shrimp
  • 8 cups greens (such as arugula, spinach, or spring mix)
  • 1 unit avocado, sliced or diced
  • 1 unit shallot, minced
  • 4 ounces sliced almonds, toasted

The dressing

  • ½ unit lemon or orange juice
  • to taste fruity or lemon-flavored extra virgin olive oil
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Prepare the Pan-Seared Citrus Shrimp or warm leftover shrimp.
  2. Toss the shrimp with the salad greens in a large bowl.
  3. Drizzle with olive oil and citrus juice, then toss to coat.
