Ingredients

The salad

  • 1 pound medium Pan-Seared Citrus Shrimp
  • 8 cups greens (such as arugula, spinach, or spring mix)
  • ½ lemon juice
  • 1 unit avocado, sliced or diced
  • 1 unit shallot, minced
  • 4 ounces sliced almonds, toasted
  • to taste unit Kosher salt
  • to taste unit freshly ground black pepper

The dressing

  • to taste unit fruity or lemon-flavored extra virgin olive oil

Instructions

  1. Prepare the Pan-Seared Citrus Shrimp or warm leftover shrimp.
  2. Toss the shrimp with the salad greens in a large bowl.
  3. Drizzle with olive oil and citrus juice, then toss lightly to coat.
  4. Add avocado, shallots, and sliced almonds.
  5. Season with salt and pepper and serve.
