Grilled Shrimp Avocado Fennel and Orange Salad

Ingredients

The salad

  • 2 whole navel oranges
  • 1 lb jumbo shrimp
  • 4 cups fresh arugula or baby greens
  • ½ small bulb fresh fennel
  • 1 medium ripe Hass avocado

The vinaigrette

  • 1 large navel orange
  • 3 tbsp fresh lemon juice
  • 1 tbsp extra-virgin olive oil
  • 3 tbsp minced shallots
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Combine the orange juice, lemon juice, olive oil, shallots, salt, and pepper in a container and shake to mix.
  2. Reserve ½ cup of the vinaigrette for the salad and pour the rest over the shrimp, seasoning with salt and pepper; let marinate for 30 minutes.
  3. Prepare the grill or grill pan over medium-high heat.
  4. Grill the shrimp for about 1½ minutes per side until cooked through.
  5. Divide the greens among four plates and top with fennel, oranges, avocado, and shrimp.
  6. Drizzle with the reserved vinaigrette and season with salt and pepper to taste.
