Ingredients

The blondie base

  • ½ cup unsalted butter
  • 2 cups light brown sugar
  • ½ cup creamy peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

The mix-ins

  • 1 cup Rolo candies, unwrapped

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 inch pan.
  2. Melt the butter and brown sugar in a saucepan over medium heat, stirring until smooth, then remove from heat and stir in the peanut butter.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Add the eggs to the peanut butter mixture one at a time, mixing well after each, then stir in the vanilla extract.
  5. Combine the wet and dry ingredients until smooth, then fold in the Rolos.
  6. Spread the batter evenly in the prepared pan and bake for 25-30 minutes until golden and edges are slightly browned.
  7. Cool on a wire rack, then cut into squares and serve.
