Peanut Butter Blondies

Instructions
- Preheat the oven to 350°F and line an 8" square pan with parchment paper.
- In a mixing bowl, combine the peanut butter, honey, egg, salt, and baking soda, stirring until a thick batter forms.
- Fold in the dark chocolate chips if using.
- Pour the batter into the prepared pan and smooth the top. Sprinkle coarse salt on top if desired.
- Bake for about 20 minutes until the top is light golden brown.
- Let the blondies cool completely before slicing and serving.
