Healthy Peanut Butter Chocolate Chip Blondies

Ingredients

  • ½ cup natural peanut butter
  • ½ cup milk of choice
  • ¼ cup water
  • ¾ cup powdered peanut butter
  • ½ cup oat flour
  • 2 Tbsp granulated sweetener of choice
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup chocolate chips and/or peanuts

Instructions

  1. Preheat the oven to 350°F and line a 9x5 loaf pan with aluminum foil.
  2. In a large bowl, combine the peanut butter, milk, and water.
  3. Add in the powdered peanut butter, oat flour, sweetener, baking powder, and salt, stirring until well combined.
  4. Fold in the chocolate chips and/or peanuts, reserving some for topping if desired.
  5. Pour the batter into the prepared loaf pan and spread it evenly.
  6. If desired, sprinkle the remaining chocolate chips/peanuts on top.
  7. Bake for 17-19 minutes until the edges are set and the center is springy.
  8. Allow to cool slightly in the pan before lifting out using the foil.
  9. Let cool completely, then slice into squares and enjoy.
