Healthy Peanut Butter Chocolate Chip Blondies

Ingredients

  • ½ cup natural peanut butter
  • ½ cup milk of choice
  • ¼ cup water
  • ¾ cup powdered peanut butter
  • ½ cup oat flour
  • 2 Tbsp granulated sweetener of choice
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup chocolate chips and/or peanuts

Instructions

  1. Preheat the oven to 350°F and line a 9x5 inch loaf pan with aluminum foil.
  2. In a large bowl, mix together the peanut butter, milk, and water.
  3. Add the powdered peanut butter, oat flour, sweetener, baking powder, and salt, and stir until well combined.
  4. Fold in the chocolate chips and/or peanuts, reserving some to sprinkle on top if desired.
  5. Pour the batter into the prepared loaf pan and spread it evenly.
  6. Optional: sprinkle the reserved chocolate chips/peanuts on top.
  7. Bake for 17-19 minutes until the edges are set and the center is springy.
  8. Allow to cool slightly in the pan for about 10 minutes, then lift out using the foil.
  9. Let cool completely before slicing into squares.
