Broccoli Rabe

Ingredients

  • 1 bunch Broccoli rabe (tough ends trimmed; ~10 oz after trimming)
  • 3 tbsp Extra virgin olive oil
  • 6 cloves Garlic (sliced thinly)
  • ¼ tsp Sea salt (plus more for boiling water)
  • ¼ tsp Black pepper
  • tsp Crushed red pepper flakes
  • 2 tbsp Grated parmesan cheese (optional, for serving)
  • as needed Lemon wedges (optional, for serving)

Instructions

  1. 1. Boil salted water in a large sauté pan and blanch the broccoli rabe for about 2 minutes.
  2. 2. Transfer the broccoli rabe to a bowl of ice water to stop the cooking process, then drain and pat dry.
  3. 3. Heat olive oil in the same pan over medium-high heat and sauté the garlic until fragrant.
  4. 4. Add the broccoli rabe, sea salt, black pepper, and crushed red pepper flakes, cooking until warm.
  5. 5. Serve with grated parmesan cheese and a squeeze of lemon if desired.
