Sautéed Broccoli Rabe

Ingredients

The vegetables

  • 1 bunch broccoli rabe

The seasoning

  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, sliced
  • ¼ teaspoon red pepper flakes
  • to taste sea salt
  • to taste freshly ground black pepper
  • 1 wedge lemon

Instructions

  1. Trim ½ inch off the ends of the broccoli rabe.
  2. Prepare a large pot of salted boiling water and a large bowl of ice water.
  3. Blanch the broccoli rabe in the boiling water for about 2 minutes until bright green.
  4. Transfer the broccoli rabe to the ice water for about 15 seconds to cool.
  5. Drain the broccoli rabe and pat it dry with paper towels.
  6. Heat olive oil in a large skillet over medium heat.
  7. Add the sliced garlic and cook for 30 seconds.
  8. Stir in the red pepper flakes.
  9. Add the blanched broccoli rabe and sauté for 3 to 5 minutes until tender.
  10. Remove from the pan, drain any excess liquid, and season with salt and pepper.
  11. Squeeze lemon juice over the broccoli rabe and serve.
