Bacon Wrapped Parmesan Broccoli Rabe

Ingredients

The Broccoli Rabe

  • 1 large bunch broccoli rabe
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • ½ teaspoon crushed red pepper flakes
  • ½ cup fresh grated parmesan
  • 12 pieces thin cut bacon
  • 2 tablespoons honey
  • ¼ cup toasted pine nuts, chopped
  • optional fresh herbs + cherry tomatoes for serving

Basil Roasted Garlic Dip

  • 5 cloves garlic
  • ½ cup full-fat plain Greek yogurt
  • ¼ cup olive oil
  • ½ cup fresh basil
  • 1 juice of 1 lemon
  • a pinch crushed red pepper flakes
  • to taste salt

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with foil, placing a cooking rack over it.
  2. In a large bowl, toss the broccoli rabe with olive oil, salt, pepper, and crushed red pepper flakes.
  3. Divide the broccoli rabe into 12 bunches and wrap each with a piece of bacon, securing with a toothpick.
  4. Place the wrapped broccoli rabe on the cooking rack and sprinkle with parmesan and drizzle with honey.
  5. Roast in the oven for about 25 minutes until the broccoli rabe is crispy and the bacon is fully cooked.
  6. Remove from the oven, discard the toothpicks, and sprinkle with additional parmesan, pine nuts, and cherry tomatoes if desired.
  7. Serve with the Basil Roasted Garlic Dip.
