Ingredients

Dressing

  • ½ cup olive oil
  • ¼ cup white balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • to taste salt
  • to taste freshly ground black pepper

Salad

  • 3 cups arugula
  • 1 small red onion, thinly sliced
  • 1 pint cherry tomatoes, halved
  • 1 piece peach, sliced
  • 1 8-ounce container burrata, drained

Instructions

  1. Combine olive oil, white balsamic vinegar, mustard, honey, salt, and pepper in a jar or bowl and mix well.
  2. In a large bowl, combine arugula, red onion, tomatoes, and peaches.
  3. Drizzle the dressing over the salad and toss to combine.
  4. Top the salad with burrata and serve immediately.
