Crispy Herby Smashed Potatoes
Ingredients
The potatoes

thin-skinned potatoes (red, purple, golden, Yukons, fingerlings, etc.), steamed and cooled
The oil and seasonings

olive oil (divided)

garlic, smashed

cup
herbs (rosemary, thyme, sage, or a combo)

salt and pepper

chili pepper or Aleppo Chili Flakes
Instructions
- Boil the whole potatoes in salted water until fork-tender, then drain and cool.
- Preheat the oven to 400°F to keep the potatoes warm.
- Smash the cooled potatoes until about ¾ inch thick.
- Heat olive oil in a skillet, add smashed garlic, and cook until fragrant.
- Add herbs to the oil and cook briefly to infuse.
- Season the oil with salt and pepper, then add the smashed potatoes, frying each side until crispy and golden.
- Keep the first batch warm in the oven while frying the second batch.
- Chop the caramelized garlic and sprinkle over the potatoes with herbs before serving.
