Crispy Herby Smashed Potatoes

Ingredients

The potatoes

  • 1½–2 lbs thin-skinned potatoes (red, purple, golden, Yukons, fingerlings, etc.), steamed and cooled

The oil and seasonings

  • 4 tablespoons olive oil (divided)
  • 6 cloves garlic, smashed
  • ¼ cup herbs (rosemary, thyme, sage, or a combo)
  • to taste salt and pepper
  • to taste chili pepper or Aleppo Chili Flakes

Instructions

  1. Boil the whole potatoes in salted water until fork-tender, then drain and cool.
  2. Preheat the oven to 400°F to keep the potatoes warm.
  3. Smash the cooled potatoes until about ¾ inch thick.
  4. Heat olive oil in a skillet, add smashed garlic, and cook until fragrant.
  5. Add herbs to the oil and cook briefly to infuse.
  6. Season the oil with salt and pepper, then add the smashed potatoes, frying each side until crispy and golden.
  7. Keep the first batch warm in the oven while frying the second batch.
  8. Chop the caramelized garlic and sprinkle over the potatoes with herbs before serving.
