Instructions
- Season the chicken with salt and pepper, ideally a day in advance.
- Preheat the grill to medium-high heat and prepare for indirect grilling.
- Mix 1 cup of BBQ sauce with ¾ cup of water.
- Place the chicken skin-side down on the hot grill and sear for about 20 minutes, turning as needed.
- Reduce the heat to low, cover, and cook for 30-40 minutes, basting with BBQ sauce until cooked through.
- Increase the heat to high and sear the skin side to crisp it up before serving.
