Grilled BBQ Chicken

The chicken
-

(2 ½-3 pound)
whole chicken, quartered

barbecue sauce

as needed
wood chips, soaked for 30 minutes and drained
Instructions
- 1. Combine the garlic powder, oregano, paprika, rosemary, salt, and pepper in a small bowl to make the herb rub.
- 2. Rub the mixture generously over the chicken pieces and let them sit at room temperature for up to 1 hour.
- 3. Preheat the grill over medium-high heat and prepare the wood chips.
- 4. Coat the grill with oil and grill the chicken skin side down for 3-5 minutes on each side until browned.
- 5. Move the chicken to the indirect heat side of the grill, cover, and cook for 5 minutes.
- 6. Brush the chicken with barbecue sauce on both sides and cook for an additional 5 minutes.
- 7. Continue cooking until the internal temperature reaches 165°F, then transfer to a platter and cover loosely with foil until ready to serve.
