Grilled BBQ Chicken

Ingredients

The rub

  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 1 tablespoon paprika
  • 1 teaspoon dried rosemary
  • 1 tablespoon brown sugar
  • to taste salt and freshly ground black pepper

The chicken

  • 1 (2 ½-3 pound) whole chicken, quartered
  • to taste barbecue sauce
  • as needed wood chips, soaked for 30 minutes and drained

Instructions

  1. 1. Combine the garlic powder, oregano, paprika, rosemary, salt, and pepper in a small bowl to make the herb rub.
  2. 2. Rub the mixture generously over the chicken pieces and let them sit at room temperature for up to 1 hour.
  3. 3. Preheat the grill over medium-high heat and prepare the wood chips.
  4. 4. Coat the grill with oil and grill the chicken skin side down for 3-5 minutes on each side until browned.
  5. 5. Move the chicken to the indirect heat side of the grill, cover, and cook for 5 minutes.
  6. 6. Brush the chicken with barbecue sauce on both sides and cook for an additional 5 minutes.
  7. 7. Continue cooking until the internal temperature reaches 165°F, then transfer to a platter and cover loosely with foil until ready to serve.
