Coconut Matcha Green Tea Oatmeal

Ingredients

The base

  • 1 cup coconut milk
  • 2 tea bags matcha green tea or regular green tea bags
  • 1 teaspoon matcha powder
  • 1 ½ cups gluten free rolled oats
  • ¼ cup coconut sugar
  • ½ tablespoon extra virgin coconut oil
  • pinch ground cinnamon
  • pinch kosher salt

Optional ingredients

  • ¼ cup unsweetened shredded coconut flakes
  • 1 tablespoon maple syrup or honey
  • to taste nuts, oats, coconut flakes or sliced banana

Instructions

  1. Heat the coconut milk until it simmers.
  2. Steep the tea bags in the milk for 3 minutes, then remove them and whisk in the matcha powder.
  3. Prepare the oats, using less water to make them thicker.
  4. When the oats are halfway cooked, add ⅔ cup of the matcha latte mixture.
  5. Finish cooking the oats until creamy.
  6. Stir in coconut sugar, coconut oil, cinnamon, salt, and optional coconut flakes.
  7. Serve the oatmeal in bowls, topping with additional matcha latte, maple syrup, and any desired toppings.
