Easy Gluten Free Pie Crust

Ingredients

  • 1 ½ cups gluten free all-purpose flour
  • ¾ teaspoon xanthan gum
  • ½ cup butter
  • 3 teaspoons sugar
  • ¾ teaspoon kosher salt
  • 6 – 8 tablespoons ice water

Instructions

  1. Pulse flour and frozen butter in a food processor until combined.
  2. Add xanthan gum, sugar, and salt, and pulse until butter is in small pieces.
  3. Drizzle in ice water and pulse until the mixture is crumbly and light yellow.
  4. Transfer the mixture to a bowl, shape into a ball, and chill in the refrigerator for at least an hour.
  5. Allow the dough to rest at room temperature for 10 to 15 minutes before rolling.
  6. Roll the dough out on a floured surface to about ¼ to ⅛ inch thick.
  7. Transfer the rolled dough to a pie dish and trim the excess, then flute the edges.
