Ingredients

  • 7 pieces gluten free soft white bread, diced
  • 2 ½ Tablespoons butter or refined coconut oil, softened
  • 1 large egg, whisked
  • 1–2 Tablespoons cold water, as needed
  • 1–2 Tablespoons sugar or sweetener of choice (optional)

Instructions

  1. Cut the bread into smaller pieces and process in a food processor until crumbly.
  2. Add the whisked egg and pulse to combine, then add the softened butter or coconut oil and blend until mixed.
  3. If the mixture is too thick, add small amounts of water until it forms a dough.
  4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  5. Roll out the chilled dough on a lightly floured surface between sheets of plastic or parchment paper to about ⅛ to ¼ inch thick.
  6. Transfer the rolled dough to an 8-inch pie pan, pressing it into the sides and trimming excess dough.
  7. Flute the edges and poke holes in the center with a fork.
  8. Bake according to your pie recipe instructions, either par-baking or baking completely.
