Baked Barbecue Chicken Wings

Ingredients

The wings

  • 2 ½ pounds party style chicken wings
  • ¼ cup kosher salt
  • 3 tablespoons honey
  • 3 cloves garlic
  • 1 tablespoon barbecue, poultry or grill seasoning
  • 8 cups water
  • as needed spray cooking spray
  • as needed optional cilantro leaves
  • as needed optional lemon wedges

The barbecue sauce

  • 1 cup Dr Pepper
  • 1 cup ketchup
  • 3 tablespoons Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 3 tablespoons steak sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper

Instructions

  1. Boil 1 cup of water, then mix with salt and honey until dissolved.
  2. Add garlic and seasoning, then pour in 7 cups of cold water and stir.
  3. Submerge chicken wings in the brine, cover, and refrigerate for 2 to 8 hours.
  4. Preheat the oven to 400°F and prepare a baking sheet with foil and cooking spray.
  5. Remove wings from brine, pat dry, and arrange in a single layer on the baking sheet.
  6. Bake wings for 40-45 minutes until golden brown.
  7. While wings bake, combine barbecue sauce ingredients in a saucepan and simmer for 10 minutes.
  8. Toss baked wings in the barbecue sauce and serve immediately with cilantro and lemon if desired.
