Ingredients

The wings

  • 4 lbs chicken wings

The coating

  • 2 tablespoons baking powder
  • ¾ teaspoon salt

Sauces (optional)

  • 2/3 cup honey
  • 1 tablespoon lime juice
  • 2 teaspoons cider vinegar
  • 2 tablespoons soy sauce
  • ½ teaspoon sesame oil
  • ½ teaspoon hot sauce
  • ½ cup BBQ sauce
  • 4 tablespoons unsalted butter
  • 1 tablespoon molasses

Instructions

  1. Adjust oven racks and preheat the oven to 250°F.
  2. Set a wire rack in a foil-lined baking sheet and spray it with non-stick spray.
  3. Pat the chicken wings dry and place them in a large bowl.
  4. Mix baking powder and salt, then add to the wings and toss to coat evenly.
  5. Arrange the wings skin side up on the wire rack in a single layer.
  6. Bake on the lower-middle rack for 30 minutes.
  7. Move the wings to the upper-middle rack, increase the temperature to 425°F, and roast for an additional 40-50 minutes until golden brown and crisp, rotating halfway through.
  8. Let the wings stand for 5 minutes before tossing them with your choice of sauce and serving.
