Instructions
- Adjust oven racks and preheat the oven to 250°F.
- Set a wire rack in a foil-lined baking sheet and spray it with non-stick spray.
- Pat the chicken wings dry and place them in a large bowl.
- Mix baking powder and salt, then add to the wings and toss to coat evenly.
- Arrange the wings skin side up on the wire rack in a single layer.
- Bake on the lower-middle rack for 30 minutes.
- Move the wings to the upper-middle rack, increase the temperature to 425°F, and roast for an additional 40-50 minutes until golden brown and crisp, rotating halfway through.
- Let the wings stand for 5 minutes before tossing them with your choice of sauce and serving.
