Crockpot Beef and Broccoli

Ingredients

The beef and sauce

  • 1 ½ pounds flank steak
  • 1 cup low-sodium beef broth
  • ¼ cup low-sodium soy sauce
  • ¼ cup oyster sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 teaspoons chili-garlic paste or Sriracha
  • 2 teaspoons minced garlic
  • 2 tablespoons cornstarch

The vegetables

  • 5 cups broccoli florets

For serving

  • as needed prepared brown rice or quinoa
  • as desired chopped green onions
  • as desired toasted sesame seeds

Instructions

  1. Coat the slow cooker with nonstick spray and place the beef inside.
  2. In a bowl, mix the beef broth, soy sauce, oyster sauce, honey, rice vinegar, chili-garlic paste, and garlic, then pour over the beef and stir.
  3. Cover and cook on LOW for 1 ½ hours.
  4. Whisk together water and cornstarch, stir into the slow cooker, and add the broccoli on top.
  5. Cover, switch to HIGH, and cook for another 30 minutes until the broccoli is tender.
  6. Serve warm over rice, garnished with green onions and sesame seeds.
