Spinach Blue Cheese Pizza

Ingredients

The pizza base

  • 1 pound pizza dough gluten-free
  • ½ tablespoon olive oil

The toppings

  • 5 ounces baby spinach
  • 1 cup rehydrated sun-dried tomatoes chopped
  • 3 cloves garlic sliced thin
  • ½ cup crumbled blue cheese
  • ¼ cup chopped walnuts
  • 1 ounce grated Parmesan cheese
  • 2 tablespoons fresh basil sliced thin

Instructions

  1. Preheat your oven to 425°F with a pizza stone on the bottom rack.
  2. Roll out the pizza dough on a lightly floured surface to your desired thickness.
  3. Transfer the crust to the pizza stone and bake for 5 minutes, then remove from the oven.
  4. Increase the oven temperature to 500°F.
  5. In a skillet, heat olive oil over medium heat and sauté the spinach until wilted. Drain excess moisture.
  6. Scatter the spinach, sun-dried tomatoes, blue cheese, garlic, walnuts, and parmesan on the crust.
  7. Using a pizza peel, place the pizza in the preheated oven and bake for 10 to 12 minutes.
  8. Sprinkle with fresh basil and serve warm.
