Ingredients

Boba

  • ¼ cup light or dark brown sugar
  • ¼ cup water
  • ½ cup black or white tapioca balls

Flan

  • cups heavy cream
  • 1 cup whole milk
  • 5 bags black tea
  • 1 pinch salt
  • ¼ cup white granulated sugar
  • 3 tablespoons white granulated sugar
  • 3 large eggs
  • 2 large egg yolks

Caramel Topping

  • 1 cup white granulated sugar
  • ¼ cup water

Instructions

  1. Prepare the boba by dissolving sugar in water and cooking according to package instructions.
  2. Infuse the cream by heating milk and salt, then steeping tea bags for 30 minutes.
  3. Make the caramel by melting sugar and water until it turns deep amber, then pour into ramekins.
  4. Temper the eggs by mixing them with a small amount of the warm milk mixture, then combine with the rest.
  5. Strain the custard mixture and pour it into the ramekins over the caramel.
  6. Bake the flan in a water bath until just set, about 30 minutes.
  7. Cool the flan in the refrigerator for at least 2 hours before serving.
  8. To serve, invert the flan onto a plate and top with boba.
