Instructions
- Prepare the boba by dissolving sugar in water and cooking according to package instructions.
- Infuse the cream by heating milk and salt, then steeping tea bags for 30 minutes.
- Make the caramel by melting sugar and water until it turns deep amber, then pour into ramekins.
- Temper the eggs by mixing them with a small amount of the warm milk mixture, then combine with the rest.
- Strain the custard mixture and pour it into the ramekins over the caramel.
- Bake the flan in a water bath until just set, about 30 minutes.
- Cool the flan in the refrigerator for at least 2 hours before serving.
- To serve, invert the flan onto a plate and top with boba.
