Ingredients

The bread

  • cups whole wheat pastry flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ¼ tsp ground nutmeg
  • ¼ tsp cinnamon
  • ¼ tsp allspice
  • ½ cup Stevia
  • ¾ cup fat-free milk
  • 1 Tbsp lemon juice
  • ¼ cup chopped pecans, toasted
  • 3 Tbsp coconut oil
  • 3 Tbsp fresh orange juice
  • 2 tsp orange zest
  • 2 large eggs
  • as needed spray cooking spray

The glaze

  • ½ cup powdered sugar
  • 2 tsp fresh orange juice
  • tsp chopped pecans, toasted

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, and spices.
  3. In a separate bowl, whisk together the wet ingredients: sugar, milk, lemon juice, pecans, oil, orange juice, zest, and eggs.
  4. Combine the wet and dry mixtures until just moist.
  5. Pour the batter into a greased 8 x 4-inch loaf pan.
  6. Bake for 45 to 48 minutes, or until a toothpick comes out clean.
  7. Cool for 10 minutes, then remove from the pan and place on a wire rack to cool completely.
  8. For the glaze, whisk together powdered sugar and orange juice until smooth, then drizzle over the bread and sprinkle with pecans.
