Instructions
- Preheat the oven to 350°F and prepare a 9 x 5 banana bread pan.
- In a medium bowl, sift together the gluten-free flour mix, baking powder, baking soda, and sea salt.
- In a mixer bowl, combine flax eggs, sugar, and coconut oil and mix for 2 minutes on medium-low speed.
- Add the vanilla and mix in the vegan yogurt and mashed bananas for 2 more minutes.
- Gradually add the dry ingredients, mixing until just combined.
- Fold in the chopped pecans until evenly distributed.
- Transfer the batter to the prepared pan, smoothing the top and adding extra pecans on top.
- Bake for 60 minutes or until a toothpick comes out with a few crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
