Pecan Banana Bread

Ingredients

  • 10 ounces Gluten Free Baking Flour Mix
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 2 pieces flax eggs or vegan egg substitutes
  • 1 cup organic brown or coconut sugar
  • ½ cup coconut oil
  • ½ piece vanilla bean or 1 teaspoon vanilla extract
  • ½ cup vegan yogurt
  • ¾ cup mashed bananas (very ripe)
  • 1 cup raw pecan pieces (chopped)
  • as needed pieces extra pecan pieces for topping

Instructions

  1. Preheat the oven to 350°F and prepare a 9 x 5 banana bread pan.
  2. In a medium bowl, sift together the gluten-free flour mix, baking powder, baking soda, and sea salt.
  3. In a mixer bowl, combine flax eggs, sugar, and coconut oil and mix for 2 minutes on medium-low speed.
  4. Add the vanilla and mix in the vegan yogurt and mashed bananas for 2 more minutes.
  5. Gradually add the dry ingredients, mixing until just combined.
  6. Fold in the chopped pecans until evenly distributed.
  7. Transfer the batter to the prepared pan, smoothing the top and adding extra pecans on top.
  8. Bake for 60 minutes or until a toothpick comes out with a few crumbs.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
