- 1. Preheat the oven to 350°F and spray a loaf pan with cooking spray.
- 2. In a large bowl, combine the dry ingredients: flour, baking soda, cinnamon, nutmeg, and salt.
- 3. In a medium bowl, mix the wet ingredients: mashed bananas, maple syrup, melted coconut oil, vanilla extract, and eggs until smooth.
- 4. Pour the wet mixture into the dry ingredients and stir to combine.
- 5. Fold in the chopped pecans.
- 6. Pour the batter into the prepared loaf pan and smooth the top.
- 7. Bake for 45-50 minutes until a toothpick inserted in the center comes out clean.
- 8. Let the bread cool in the pan for 10 minutes before removing it.
