Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon nutmeg (optional)
  • 1 teaspoon lime zest, finely grated (optional)
  • ½ teaspoon salt

Wet Ingredients

  • 4 ounces unsalted butter (room temperature)
  • 2-3 large overripe bananas (about 1½ cups mashed)
  • 2 large eggs
  • cup sour cream
  • 1 teaspoon vanilla extract

Nuts

  • ¾-1 cup nuts (pecans or walnuts)

Instructions

  1. Preheat the oven to 350℉/177℃ and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix all the dry ingredients together.
  3. Add the butter to the dry mixture and beat until fully incorporated.
  4. In a small bowl, mash the bananas and mix in the eggs, sour cream, and vanilla until smooth.
  5. Gradually add the wet ingredients to the dry mixture and mix until fully incorporated, then stir in half of the chopped nuts.
  6. Pour the batter into the greased pan and spread evenly, then sprinkle the remaining nuts on top.
  7. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the bread before removing it from the pan to serve.
