Gluten-Free Banana Bread

Ingredients

The bread

  • 1 cup pecans or walnuts
  • 2 cups gluten-free flour blend with xanthan gum
  • 2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 large very ripe bananas, mashed
  • 1 cup light brown sugar
  • 3 large eggs
  • ½ cup unsalted butter, melted
  • 2 tsp vanilla extract
  • 1–2 Tbsp raw sugar (for sprinkling)

For preparation

Instructions

  1. Preheat the oven to 325°F and prepare a loaf pan with oil spray and parchment paper.
  2. Toast the nuts on a baking sheet until fragrant, then chop them coarsely.
  3. Whisk together the dry ingredients in a bowl.
  4. In another bowl, mash the bananas and mix with brown sugar until smooth, then add eggs, melted butter, and vanilla extract.
  5. Combine the dry ingredients with the banana mixture until smooth, then fold in the nuts.
  6. Transfer the batter to the prepared pan, smooth the surface, and sprinkle with raw sugar.
  7. Create a shallow cut in the batter with a knife to help it bake evenly.
  8. Bake for 60-80 minutes until a thermometer reads 190°F, then cool in the pan for 15 minutes before transferring to a wire rack.
