Instructions
- Preheat the oven to 325°F and prepare a loaf pan with oil spray and parchment paper.
- Toast the nuts on a baking sheet until fragrant, then chop them coarsely.
- Whisk together the dry ingredients in a bowl.
- In another bowl, mash the bananas and mix with brown sugar until smooth, then add eggs, melted butter, and vanilla extract.
- Combine the dry ingredients with the banana mixture until smooth, then fold in the nuts.
- Transfer the batter to the prepared pan, smooth the surface, and sprinkle with raw sugar.
- Create a shallow cut in the batter with a knife to help it bake evenly.
- Bake for 60-80 minutes until a thermometer reads 190°F, then cool in the pan for 15 minutes before transferring to a wire rack.
