Ingredients

The batter

  • 4 medium bananas (overripe, around 10 ½ ounces with peel)
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • ½ cup coconut oil (or any neutral flavored oil)
  • 1 ½ cups flour (white or wheat)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup pecans (roughly chopped)

The topping

  • ½ teaspoon cinnamon
  • 2 tablespoons sugar

Instructions

  1. Preheat the oven to 180C/350F and line a loaf pan with parchment paper.
  2. In a large bowl, mash the bananas, then mix in both sugars and melted coconut oil until smooth.
  3. Add the flour, baking powder, baking soda, salt, and cinnamon, and mix until fully incorporated.
  4. Fold in the chopped pecans.
  5. Pour the batter into the lined pan and sprinkle with cinnamon and sugar.
  6. Bake for 35-40 minutes until a toothpick comes out clean.
  7. Allow the banana bread to cool completely before slicing.
