Ingredients

The bread

  • 3 pieces ripe bananas
  • 1 piece egg
  • ½ cup coconut sugar
  • 3 tbsp melted coconut oil
  • 4 tsp baking powder
  • ½ tsp sea salt
  • ¾ tsp cinnamon
  • ¾ cup non-dairy milk
  • 1 ¼ cup almond flour
  • 1 ¼ cup gluten free flour
  • 1 cup gluten free oats
  • ¼ cup chopped pecans
  • ½ cup dairy free chocolate chips

Toppings

  • more to taste chopped pecans
  • more to taste dairy free chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a 9 x 5 inch loaf pan with parchment paper, using coconut oil to hold it in place.
  2. In a large bowl, mash the ripe bananas.
  3. Add the remaining ingredients to the mashed bananas and mix until well combined.
  4. Pour the batter into the prepared loaf pan and top with extra chocolate chips and chopped pecans.
  5. Bake for 75 minutes or until a toothpick comes out clean.
