Ingredients

The batter

  • ¼ cup tahini
  • ¼ cup honey
  • ¼ cup olive oil
  • ¼ cup coconut sugar
  • 2 large eggs
  • 4 very ripe large bananas
  • 1 slightly ripe banana
  • 1 ½ tsp baking soda
  • ¼ tsp sea salt
  • 1 ½ tsp vanilla
  • 1 cup dairy free chocolate chips
  • ¾ cup almond flour
  • ¼ cup gluten free flour
  • ½ cup chopped pecans (optional)

Toppings

  • to taste sesame seeds
  • to taste cinnamon

Instructions

  1. Preheat the oven to 350°F and line a 9x5 loaf pan with parchment paper, greasing it with oil.
  2. In a medium bowl, mash the ripe bananas well.
  3. Add olive oil, tahini, coconut sugar, honey, vanilla, and eggs to the mashed bananas and mix well.
  4. Incorporate the almond flour, gluten-free flour, baking soda, and sea salt into the mixture and combine thoroughly.
  5. Fold in the dairy-free chocolate chips and chopped pecans if using.
  6. Pour the batter into the prepared loaf pan.
  7. Slice the remaining banana in half and place it flat on top of the batter.
  8. Sprinkle sesame seeds and cinnamon on top if desired.
  9. Bake for 55-60 minutes until a toothpick comes out clean.
