Instructions
- Preheat the oven to 350°F and line a 9x5 loaf pan with parchment paper, greasing it with oil.
- In a medium bowl, mash the ripe bananas well.
- Add olive oil, tahini, coconut sugar, honey, vanilla, and eggs to the mashed bananas and mix well.
- Incorporate the almond flour, gluten-free flour, baking soda, and sea salt into the mixture and combine thoroughly.
- Fold in the dairy-free chocolate chips and chopped pecans if using.
- Pour the batter into the prepared loaf pan.
- Slice the remaining banana in half and place it flat on top of the batter.
- Sprinkle sesame seeds and cinnamon on top if desired.
- Bake for 55-60 minutes until a toothpick comes out clean.
