Spelt Banana Bread with Pecans & Chocolate Chunks

Ingredients

The bread

  • 2 cups light spelt flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon fine sea salt
  • 4-5 pieces very ripe bananas, peeled (1 ½ cups mashed banana total)
  • ½ cup maple syrup
  • ½ cup melted coconut oil (or avocado oil, sunflower oil, melted vegan butter)
  • 1 teaspoon vanilla extract

The mix-ins

  • ¾ cup dairy-free chocolate chunks
  • ¾ cup pecan halves, chopped

Instructions

  1. Preheat the oven to 350°F and prepare a 9×5 loaf pan with grease and parchment paper.
  2. In a large bowl, mix the spelt flour, cinnamon, baking powder, baking soda, sea salt, chocolate chunks, and chopped pecans.
  3. In a blender, combine the bananas, maple syrup, coconut oil, and vanilla, blending until smooth.
  4. Pour the banana mixture into the dry ingredients and gently stir until just combined.
  5. Transfer the batter to the prepared loaf pan, smoothing the top and optionally adding extra pecans and chocolate on top.
  6. Bake for 50-55 minutes until a tester comes out clean, then cool before slicing.
