Instructions
- Preheat the oven to 350°F and prepare a 9×5 loaf pan with grease and parchment paper.
- In a large bowl, mix the spelt flour, cinnamon, baking powder, baking soda, sea salt, chocolate chunks, and chopped pecans.
- In a blender, combine the bananas, maple syrup, coconut oil, and vanilla, blending until smooth.
- Pour the banana mixture into the dry ingredients and gently stir until just combined.
- Transfer the batter to the prepared loaf pan, smoothing the top and optionally adding extra pecans and chocolate on top.
- Bake for 50-55 minutes until a tester comes out clean, then cool before slicing.
