Instructions
- Preheat the oven to 350°F.
- Make the crumble by mixing chopped pecans, pure maple sugar, and ghee in a small bowl until well distributed.
- Grease a loaf pan with ghee or coconut oil and optionally line the bottom with parchment paper.
- In a food processor, combine all dry ingredients and blend until evenly mixed.
- In the same food processor, add the sweet potato, ghee, and maple syrup, then process until creamy.
- Add the eggs and blend until combined.
- Mix the reserved dry ingredients into the wet mixture until just combined.
- In a measuring cup, combine buttermilk, lime juice, and vanilla extract, then add to the batter and process briefly.
- Transfer the batter to a bowl and gently stir in the grated apples.
- Pour the batter into the prepared loaf pan and sprinkle the crumble on top.
- Bake for about 50 minutes, or until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
