Ingredients

Dry Ingredients

  • 1 cup vanilla flavored whey protein powder
  • ½ cup almond flour
  • ½ cup tapioca starch
  • ¼ cup coconut flour
  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • ½ tsp cream of tartar
  • ½ tsp Himalayan salt

Wet Ingredients

  • 1 large purple skin white flesh sweet potato, baked and cooled, skin removed (about 300g | 10oz)
  • cup ghee
  • ¼ cup pure maple syrup
  • 2 large eggs
  • ½ cup buttermilk
  • 1 juiced lime
  • 1 tsp pure vanilla extract

Add-ins

  • 3 medium red apples, peeled and grated (2 cups)

Crumble

  • ½ cup chopped raw pecans
  • 2 tbsp pure maple sugar
  • 1 tbsp ghee

Instructions

  1. Preheat the oven to 350°F.
  2. Make the crumble by mixing chopped pecans, pure maple sugar, and ghee in a small bowl until well distributed.
  3. Grease a loaf pan with ghee or coconut oil and optionally line the bottom with parchment paper.
  4. In a food processor, combine all dry ingredients and blend until evenly mixed.
  5. In the same food processor, add the sweet potato, ghee, and maple syrup, then process until creamy.
  6. Add the eggs and blend until combined.
  7. Mix the reserved dry ingredients into the wet mixture until just combined.
  8. In a measuring cup, combine buttermilk, lime juice, and vanilla extract, then add to the batter and process briefly.
  9. Transfer the batter to a bowl and gently stir in the grated apples.
  10. Pour the batter into the prepared loaf pan and sprinkle the crumble on top.
  11. Bake for about 50 minutes, or until golden and a toothpick comes out clean.
  12. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
