Ingredients

  • 2 whole apples, diced
  • 1 tablespoon vanilla extract
  • ½ cup chopped pecans
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • ½ teaspoon Himalayan pink salt
  • 1 ½ cups gluten free rolled oats
  • 2 whole flax eggs (2 tablespoons ground flaxseed plus 6 tablespoons water)

Instructions

  1. Make flax eggs by mixing 2 tablespoons of ground flaxseed with 6 tablespoons of water and set aside.
  2. Preheat the oven to 350°F.
  3. In a large bowl, combine diced apples, vanilla extract, chopped pecans, maple syrup, and cinnamon, mixing well.
  4. Add the rolled oats and Himalayan pink salt to the mixture and combine.
  5. Incorporate the flax eggs into the mixture until everything is well coated.
  6. Transfer the mixture into a square baking dish.
  7. Bake for 35-40 minutes until the edges are browned, adjusting baking time for desired crispiness.
