Ingredients

The Filling

  • 5 medium apples, cored and diced
  • 1 tablespoon + 1 teaspoon arrowroot starch
  • 3 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon

The Peanut Butter Crumble

  • ½ cup natural peanut butter
  • ¼ cup pure maple syrup
  • cups old-fashioned rolled oats
  • ¼ cup almond flour
  • ¼ cup chopped dry roasted peanuts
  • ½ teaspoon sea salt
  • ¼ cup solid coconut oil, not melted

Instructions

  1. Preheat the oven to 350ºF.
  2. In a medium bowl, toss the apples with the arrowroot starch, maple syrup, and cinnamon, then spread the mixture in a baking dish.
  3. In the same bowl, combine peanut butter and maple syrup, then mix in rolled oats, almond flour, chopped peanuts, salt, and solid coconut oil.
  4. Spoon and press the crumble mixture over the apple mixture in the baking dish.
  5. Bake uncovered for 25 minutes, then tent with foil and bake for an additional 30 minutes.
  6. Allow to cool for 5 minutes before serving.
