Instructions
- Heat a saucepan on medium-high heat and add chopped apples, cinnamon, nutmeg, honey, and vanilla.
- Cook until the apples soften, about 2-3 minutes.
- Mix cornstarch and water in a small bowl, then add to the apple mixture and stir for 30 seconds.
- Allow the filling to cool for at least 5 minutes.
- Lay empanada wrappers on a flat surface and glaze the edges with water using a brush.
- Add 1 tablespoon of the apple mixture to each wrapper, ensuring not to overstuff.
- Seal the empanadas with a fork by pressing down along the edges.
- Spritz the air fryer basket with cooking oil and place the empanadas inside without stacking.
- Brush the tops of the empanadas with the beaten egg.
- Set the air fryer to 400 degrees and cook for 8-10 minutes until golden brown.
- Cool before serving.
