Ingredients

The seeds

  • 2 cups raw pumpkin seeds or pepitas

The seasoning

  • 2 tablespoons melted butter or olive oil
  • a pinch sea salt

Honey Mustard Seasoning

  • 2 teaspoons ground mustard
  • 1 teaspoon garlic powder
  • 1 tablespoon honey
  • a pinch smoked paprika

Spicy Seasoning

  • ¼ to ½ teaspoon cayenne
  • ½ teaspoon cumin
  • ¼ teaspoon onion powder
  • ¼ to ½ teaspoon chili powder
  • ¼ teaspoon pepper
  • ¼ teaspoon salt

Instructions

  1. Carve the pumpkin and clean the seeds by rinsing them to remove pulp.
  2. Dry the seeds on parchment paper or a baking sheet.
  3. Preheat the oven to 350°F (175°C) and prepare a baking sheet.
  4. Mix the seeds with butter or oil, salt, and any desired seasonings.
  5. Spread the seeds evenly on the baking sheet.
  6. Bake for 12-15 minutes, stirring every 5-6 minutes.
  7. Allow the seeds to cool completely before serving.
