Ingredients

The seeds

  • cups fresh raw pumpkin seeds

The oil and seasoning

  • 1 Tbsp olive oil
  • to taste none salt
  • to taste none freshly ground black pepper (optional)

Instructions

  1. Preheat the oven to 325°F.
  2. Cut the top off the pumpkin and scoop out the seeds into a large bowl.
  3. Cover the seeds with water and stir to remove the pulp and stringy flesh.
  4. Rinse the seeds in a colander and repeat until clean.
  5. Drain the seeds and spread them on a clean kitchen towel to dry.
  6. Brush olive oil over a baking sheet and toss the seeds to coat.
  7. Season with salt and pepper, then spread into a single layer.
  8. Bake for 15 minutes, then toss and bake for an additional 10-15 minutes until golden brown.
  9. Remove from the oven and let cool before storing in an airtight container.
