Roasted Pumpkin Seeds

Instructions
- Preheat the oven to 325°F.
- Cut the top off the pumpkin and scoop out the seeds into a large bowl.
- Cover the seeds with water and stir to remove the pulp and stringy flesh.
- Rinse the seeds in a colander and repeat until clean.
- Drain the seeds and spread them on a clean kitchen towel to dry.
- Brush olive oil over a baking sheet and toss the seeds to coat.
- Season with salt and pepper, then spread into a single layer.
- Bake for 15 minutes, then toss and bake for an additional 10-15 minutes until golden brown.
- Remove from the oven and let cool before storing in an airtight container.
