Ingredients

The spices

  • 1 stick cinnamon (broken into pieces)
  • ½ teaspoon whole black peppercorns (cracked)
  • ½ teaspoon coriander seeds (cracked)
  • 7 whole cloves

The liquid

  • 2 quarts apple cider
  • 4 strips orange zest (3-inch strips)
  • 1 tablespoon brown sugar (plus more to taste)
  • 16 ounces brandy

For garnish

  • to taste orange slices

Instructions

  1. Toast the cinnamon stick pieces, peppercorns, coriander seeds, and cloves in a large saucepan over medium heat until fragrant.
  2. Slowly add the apple cider, orange zest, and brown sugar to the saucepan, then simmer for about 30 minutes.
  3. Skim any foam that rises to the surface during simmering.
  4. Prepare a fine mesh strainer lined with a coffee filter or cheesecloth over a bowl and strain the mixture, discarding the solids.
  5. Return the strained cider mixture to the saucepan and stir in the brandy.
  6. Serve the mulled cider in mugs with orange slices for garnish.
