Ingredients

The cider

  • 10 to 12 medium apples, cut into quarters
  • 2 large oranges
  • 4 to 5 sticks cinnamon
  • 1 tablespoon whole cloves
  • 1 gallon water
  • ½ cup pure maple syrup or packed dark brown sugar
  • 1 teaspoon pure vanilla extract

Optional spices

  • 1 whole nutmeg
  • 1 whole star anise
  • 1 teaspoon allspice berries
  • 4 whole black peppercorns

For serving

  • to taste apple slices and cinnamon sticks
  • 2 tablespoons bourbon or rum (optional)

Instructions

  1. Add the apples and quartered oranges to a large pot, along with the spices and water.
  2. Bring the mixture to a rapid simmer, then reduce the heat and let it simmer for 2 hours.
  3. Remove the unpeeled orange slices and mash the remaining ingredients in the pot.
  4. Simmer uncovered for an additional hour.
  5. Strain the cider through a fine mesh strainer, pressing the solids to extract as much liquid as possible.
  6. Return the strained cider to the pot, add the maple syrup or brown sugar and vanilla, and stir to combine.
  7. Serve warm or chilled, garnished with apple slices and cinnamon sticks.
