Instructions
- 1. Preheat the oven to 400°F.
- 2. Wash and peel the sweet potatoes, then slice them into 1/8-inch thick slices.
- 3. In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, cayenne pepper (if using), salt, and cracked pepper.
- 4. In a large bowl, drizzle olive oil over the sweet potato slices and sprinkle the spice mix on top. Toss until evenly coated.
- 5. Arrange the sweet potato slices in a casserole dish, stacking them like a deck of cards.
- 6. Cover the dish with foil and roast for 30 minutes.
- 7. Remove the foil and roast for an additional 15 minutes, testing for doneness with a fork. If still firm, roast for another 10-15 minutes.
