Ingredients

The sweet potatoes

  • 2 medium sweet potatoes

The seasoning

  • 2 Tbsp olive oil
  • 1 Tbsp brown sugar
  • 1 tsp smoked paprika
  • tsp garlic powder
  • tsp cayenne pepper (optional)
  • ¼ tsp salt
  • 10-15 cranks freshly cracked pepper

Instructions

  1. 1. Preheat the oven to 400°F.
  2. 2. Wash and peel the sweet potatoes, then slice them into 1/8-inch thick slices.
  3. 3. In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, cayenne pepper (if using), salt, and cracked pepper.
  4. 4. In a large bowl, drizzle olive oil over the sweet potato slices and sprinkle the spice mix on top. Toss until evenly coated.
  5. 5. Arrange the sweet potato slices in a casserole dish, stacking them like a deck of cards.
  6. 6. Cover the dish with foil and roast for 30 minutes.
  7. 7. Remove the foil and roast for an additional 15 minutes, testing for doneness with a fork. If still firm, roast for another 10-15 minutes.
