Strawberry Rosehip Frozen Yogurt

Ingredients

The base

  • cups full-fat coconut milk or milk of your choice
  • ½ cup honey
  • 2 tablespoons rosehips or rosehip tea bags (optional)
  • 1 teaspoon vanilla bean seeds or 2 teaspoons vanilla extract

The fruit and yogurt

  • 3 cups fresh or frozen strawberries, hulled
  • 3 cups plain Greek yogurt (0%, 2%, or full-fat)

Instructions

  1. Heat the milk and honey in a saucepan over low heat until simmering, then add the rosehips and vanilla.
  2. Cover and steep for 10 minutes, then strain the milk to remove the solids.
  3. Blend the strained milk with 2 cups of strawberries until smooth.
  4. Add the Greek yogurt and blend until combined, then chop the remaining strawberries and mix them in.
  5. Chill the mixture in the fridge.
  6. Churn in an ice cream maker according to the manufacturer's instructions, or freeze in a ziplock bag and blend until smooth if you don't have an ice cream maker.
