Ingredients

The main ingredients

  • 1 large head cauliflower
  • 2 cups crushed tortilla chips
  • ¾ cup gluten-free all purpose flour
  • 3 tablespoons tapioca flour
  • ¾ cup non-dairy milk

Seasoning and sauces

  • ½ teaspoon ground black pepper
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • 1 ⅔ cups store-bought BBQ sauce
  • 1 bottle ranch dressing (optional)

Instructions

  1. Preheat the oven to 450°F and prepare a baking sheet.
  2. Chop the cauliflower into small, even-sized florets.
  3. Crush the tortilla chips in a blender and transfer them to a shallow bowl.
  4. In a bowl, whisk together the flour, tapioca flour, non-dairy milk, pepper, salt, and garlic powder until smooth.
  5. Coat the cauliflower florets in the batter mixture.
  6. Transfer the coated cauliflower to the crushed tortilla chips to coat completely.
  7. Place the coated cauliflower on the baking sheet with space between each piece.
  8. Bake for 20-22 minutes.
  9. Prepare the BBQ sauce in a shallow bowl, thinning if necessary.
  10. Remove the baking sheet from the oven and dip the cauliflower in the BBQ sauce before returning to the sheet.
  11. Bake for an additional 5 minutes.
  12. Serve immediately with ranch dressing if desired.
