Instructions
- Heat olive oil in a large saucepan over medium-high heat until shimmering.
- Add the diced carrot, celery, and onion, and sauté for 5 minutes until soft, stirring occasionally.
- Add the condensed cream of chicken soup and milk, and whisk until combined.
- Bring the soup to a simmer, then remove from heat.
- Serve warm.
