Homemade Cream of Chicken Soup

Ingredients

  • 3 tablespoons butter
  • 1 cup onion, diced
  • 2 teaspoons minced garlic
  • 2 medium carrots, sliced in thick chunks
  • 2 stalks celery, diced
  • 2 teaspoons fresh minced thyme
  • 1 bay leaf
  • 3 tablespoons flour
  • 1 canned evaporated milk
  • 1 cup chicken broth
  • 2-3 cups cooked chicken
  • 1 teaspoon Creole seasoning
  • 1 teaspoon chicken bouillon
  • ½ tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped flat-leaf parsley

Instructions

  1. Heat butter in a medium pot over medium heat.
  2. Add onions, garlic, carrots, celery, thyme, and bay leaf, and sauté for 5-6 minutes.
  3. Stir in the flour until fully incorporated.
  4. Add evaporated milk and chicken broth, and bring to a boil while stirring constantly until slightly thickened.
  5. Incorporate shredded chicken, creole seasoning, chicken bouillon, Worcestershire sauce, and peas.
  6. Season with salt and pepper to taste, and adjust as needed.
  7. Garnish with parsley before serving.
