Instructions
- Shred the cucumber or chop it in a food processor, toss with ½ teaspoon salt, and let it sit over a strainer or paper towels for 20 to 30 minutes to remove excess liquid.
- In a medium bowl, combine yogurt, cucumber, lemon juice, dill, garlic, and white wine vinegar. Season with salt and pepper to taste.
- Drizzle lightly with olive oil and refrigerate for at least 30 minutes before serving.
