Tzatziki Sauce

Ingredients

  • 1 cup plain Greek yogurt
  • 1 medium cucumber
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons fresh dill
  • 1 teaspoon garlic, minced
  • 1 teaspoon white wine vinegar
  • to taste none olive oil

Instructions

  1. Shred the cucumber or chop it in a food processor, toss with ½ teaspoon salt, and let it sit over a strainer or paper towels for 20 to 30 minutes to remove excess liquid.
  2. In a medium bowl, combine yogurt, cucumber, lemon juice, dill, garlic, and white wine vinegar. Season with salt and pepper to taste.
  3. Drizzle lightly with olive oil and refrigerate for at least 30 minutes before serving.
