Tzatziki Sauce

Ingredients

  • 2 cups grated cucumber
  • 2 cups plain Greek yogurt
  • 4 cloves minced garlic
  • 2 tablespoons olive oil
  • 1-2 tablespoons vinegar or lemon juice
  • 2 tablespoons dill
  • to taste salt and white pepper

Instructions

  1. Drain and squeeze out as much liquid from the grated cucumber as possible.
  2. Add the squeezed cucumber to a mixing bowl and discard the liquid.
  3. Combine the remaining ingredients in the bowl: yogurt, garlic, olive oil, vinegar or lemon juice, dill, salt, and pepper.
  4. Mix everything together until fully combined and adjust seasonings to taste.
  5. Cover the mixture and refrigerate for at least 1 hour.
  6. Serve with warm pita bread and/or vegetables.
