Tzatziki Sauce

Ingredients

  • 1 cup whole Greek yogurt
  • 10 oz English cucumber
  • Tbsp chopped fresh dill
  • 1 clove garlic
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • to taste sea salt or table salt

Instructions

  1. Peel the cucumber if desired and remove the seeds.
  2. Chop the cucumber into chunks and pulse in a food processor until finely chopped.
  3. Press the cucumber against the sides of the processor bowl to remove excess liquid.
  4. In a mixing bowl, combine yogurt, cucumber, dill, garlic, olive oil, and lemon juice. Season with salt to taste.
  5. Stir the mixture until well blended. If too thick, add some reserved cucumber juice to adjust the consistency.
  6. Let the dip rest at room temperature for about 30 minutes if serving over warm food.
