Tzatziki Sauce

Instructions
- Peel the cucumber if desired and remove the seeds.
- Chop the cucumber into chunks and pulse in a food processor until finely chopped.
- Press the cucumber against the sides of the processor bowl to remove excess liquid.
- In a mixing bowl, combine yogurt, cucumber, dill, garlic, olive oil, and lemon juice. Season with salt to taste.
- Stir the mixture until well blended. If too thick, add some reserved cucumber juice to adjust the consistency.
- Let the dip rest at room temperature for about 30 minutes if serving over warm food.
