Tzatziki (Greek Cucumber-Yogurt Sauce)

Instructions
- Grate the cucumber coarsely and transfer to a sieve to drain, squeezing to encourage moisture to escape.
- Let the cucumber drain for at least 5 minutes.
- In a medium bowl, mix the drained cucumber with Greek yogurt, minced garlic, herbs, lemon juice, and salt.
- Taste and adjust seasoning with more salt and lemon if needed.
