Tzatziki (Greek Cucumber-Yogurt Sauce)

Ingredients

  • 1 large or 3 small cucumbers
  • 1 cup plain Greek yogurt
  • 1 clove garlic
  • 2–3 tablespoons minced herbs (such as mint and/or dill)
  • tablespoons fresh-squeezed lemon juice
  • ½ teaspoon kosher salt

Instructions

  1. Grate the cucumber coarsely and transfer to a sieve to drain, squeezing to encourage moisture to escape.
  2. Let the cucumber drain for at least 5 minutes.
  3. In a medium bowl, mix the drained cucumber with Greek yogurt, minced garlic, herbs, lemon juice, and salt.
  4. Taste and adjust seasoning with more salt and lemon if needed.
